bread ke pakoda

Ingredients:-4-5 Bread Slices
1cup Gram Flour (Besan)
1 tbsp rice flour
1/4th tsp turmeric powder
Salt to taste
1/2 tsp Ajwain
1/2 tsp Red chili powder to taste
1/4th tsp chaat Masala powder
Water for batter
1/2 tsp garlic paste
Oil for frying
but but but but
if you making for Adi then no Garlic please...))

Method:-1. Remove the crust from all sides of the bread.
2. Cut Bread slices into desired shapes (like triangle, rectangle etc.)
3. Mix all the dry ingredients together: Gram flour (besan), rice flour, ajwan, red chilli powder,chaat masala, turmeric , garlic paste and salt. Rice flour adds to the crispness.
4. Now by pouring little water at a time make a smooth batter (neither too thick nor too lose)
5. Heat oil in a kadhai.
6. Dip bread piece in the batter and fry till both sides are golden brown on medium flame.
7. The crispy, delicious pakoras are ready to serve.
8. Serve bread pakora hot with green chutney and tomato sauce.

Besan laddoo !!



Ingredients of besan laddoo :
2 cups gram flour (besan)
11/2 cup sugar (grinded)
1 cup ghee
1 tsp each almonds, pistachios, cashew nuts (chopped)

Preparation of besan ke ladoo:
  • In a kadhai mix gram flour and ghee over a low heat.
  • Keep constantly stirring to avoid lumps.
  • When it releases an appetizing smell, it is ready.
  • Remove from the heat and allow it to cool.
  • Add sugar and nuts to the gram flour and mix thoroughly.
  • Now form ping-pong size balls of the mixture.
  • Besan Laddoo are ready to be served.

Eggless Cake !!


Ingredients:
• 1 Cup grated mixed fruits / 1 Cup mashed banana with little lime juice • 1 Cup water • 1 Cup sugar • 2 Cups self-rising flour • 1/4 Cup milk • 125 gms Butter • 1 tsp Soda bicarbonate • Vanilla essence
How to make Eggless Cake:

Heat water, sugar and butter together till the butter melts.
Let the above mixture cool completely.
Add soda bicarbonate to mixture.
Mix flour, fruit and milk in a bowl.
Mix both the mixtures.
Add Vanilla essence according to the amount of cake.
Pour the whole batter into a greased pan.
Bake it at 180 C for one hour.
Eggless cake is ready.

How to make "Ras Malai" !!

Ingredients:
• 200 gms Cottage Cheese • 2 cups Sugar
• 1 liter Milk
• 1 tsp Cardamom Powder
• 1 tsp Almonds (chopped)

• 1 tsp Pistachios (chopped)

How to make Ras Malai:

Mix milk, cardamom powder and 1/2 cup sugar.
Boil till gets reduced to its half.
Make balls from cottage cheese and flatten them in center.
Prepare sugar syrup.
Boil the syrup over medium heat, till all the sugar is dissolved.
Put paneer balls in it and boil it for few minutes.
Add paneer balls in the milk sugar mixture.
Keep it for cooling.
Garnish with almonds and pistachios.
Ras Malai is ready to eat. Serve chilled.

How to make "Aloo Ki Tikki" !!



Ingredients:
• 3-4 Potatoes (boiled) • 3 Green Chilies (chopped) • 1/2 tsp Red Chili Powder • 5-6 twigs Coriander Leaves (chopped) • Salt to taste • A pinch of Asafoetida • Oil to fry

How to make Aloo Ki Tikki:
Peel the boiled potatoes and mash them while still warm.
Add green chilies, coriander leaves, salt, asafoetida and red chili powder to it and mix well.
Divide the mixture into 10-12 portions, shape them into round tikkis and flatten them a bit.
Now heat a tawa and shallow fry the tikkis in oil on both sides, till golden. Drain onto an absorbent paper.
Aloo ki Tikki is ready to serve. Serve with chutney.

how to make rice Kheer !!

Ingredients:







1/4th cup long grain rice (washed and drained)
4-5 cups milk
2-3 cardamom seeds (crushed)
2 tbsp almonds (blanched silvered)
A pinch of saffron threads, soaked in a little hot milk
1 tbsp skinned pistachio nuts (chopped)
1 tbsp raisins (optional)
lil babe saffron
2-3 tbsp sugar or as desired

How to make kheer:
  • Put the rice, milk and cardamom in a pan, bring to boil and simmer gently until the rice is soft and the grains are starting to break up.
  • Add almonds, pistachio, saffron and raisins and simmer for 3-4 minutes.
  • Add the sugar and stir until completely dissolved.
  • Remove the rice kheer from heat and serve either warm or chilled.

How to make chole !!

Ingredients :

  • 2 cups Garbanzo Beans
  • 2 tomatoes (chopped)
  • 1 cup Tomato Puree or Paste
  • 3 medium Onions (finely chopped in chopper)
  • 2 cloves minced Garlic (optional as per taste)
  • 1 tbsp. Ginger paste
  • 2 Green Chilies chopped
  • Salt to taste
  • ¼ tsp. Turmeric powder
  • 1½ tsp. Red Chili Powder
  • 1 tsp. Coriander powder
  • 4 tsp. Vegetable Oil / Extra Virgin Olive Oil
  • ¼ tsp. Garam Masala Powder
  • 3 tsp. of Chana Masala Powder
  • ¼ tsp. Cumin Seeds


    How
    to make chole !
  • Soak chhole/beans overnight in salty warm water with two tea bags.  (adding Tea Bags will turn Chana Black in Color)
  • Boil Chole/Chana along with tea bags in pressure cooker/Microwave till they become soft.
  • On Medium Low Heat, Heat the Pan first and put Oil in Pan.
  • When oil is ready (you can throw one cumin seed if it sizzles then oil is ready). Add Cumin seeds.
  • When Cumin Seeds splutter, add minced Garlic and Ginger Paste.
  • Add chopped Onions  and add a pinch of Salt and fry till they turn brown (Adding salt while frying Onions makes it quicker to fry Onions)
  • Add coriander powder and fry for some time till it becomes light brown.
  • Add turmeric powder & chili powder and Salt to taste.
  • Add Garam Masala and Chana Masala and again fry for some time.
  • Add Pureed tomatoes and fry till the oil leaves from the sides.
  • Add chopped Green Chilies.
  • Take out the Tea Bags and Add Chole/Chana into the Pan without water and stir so that it gets mixed up well.
  • Add the same water which was left in pressure cooker while boiling Chole/Chana .
  • Cook the Chole/Chana with gravy for 8-12 min’s till gravy dries (but Chana or Masala should not burn).
  • Garnish with Coriander Leaves and ring Onions and Tomato.
  • Serve with Puris, Parathas, Chapatis or Rice.

HOW to make Kachori !!


Ingredients :
3/4th cup skinless dried black beans (urad)
4 cups Flour (atta)
1 green chili chopped
1/2tsp Salt
Oil for deep frying
1tbsp anise seeds (Saunf)
1tsp coriander seeds
1tsp white cumin seeds
1/2tsp red chili powder
1/4th tsp asafoetida powder


HoW tO maKe Daal kachori :

Soak the beans in water overnight then rinse and drain.
Sift the flour and gradually add enough water to make soft dough. Cover the dough with damp cloth and leave for 30 minutes.
Grind the drained beans with the chili powder, salt and spices to make stuffing. Mix well and divide it into 16 equal portions.
Divide the dough into 16, using wet hands, and smear each portion with a little oil.
Flatten and roll out into 2inch round.
Wrap one portion of stuffing in each round and roll into a smooth ball, using greased hands.
Flatten and roll into a 3-4 inch round.
Heat plenty of oil in a deep frying pan or a kadhai.
Now lift the rolled kachori and carefully slip it into the hot oil.
Immediately start flickering hot oil over the top of it with a spatula so that it will swell up like a ball.
This should take only a few seconds. Flip the kachori over and cook the other side until golden brown.Serve the dal kachori hot with chutney.

shahi paneer !!


Ingredients:
• 250 g Paneer/Cottage Cheese (cut into large cubes) • 3 chopped Tomatoes • 1 chopped Onion (if you want)• 10 Cashew Nuts (ground to fine paste) • 1½ tsp Ginger-Garlic Paste • 1 tsp Chili Paste • 1 tsp Tomato Paste • ½ tsp Garam Masala • Salt (to taste) • ½ tsp Chili Powder • A pinch of Cochineal • ½ tsp Turmeric Powder • 1 tsp Coriander Powder • Oil/Ghee (to fry) • 2 tbsp Oil/Ghee • 2 tbsp chopped Coriander (to garnish)
How to make Shahi Paneer:
Heat 2 tbsp oil/ghee in a large saucepan and fry onion, until soft.
Add ginger-garlic paste and chili paste. Mix and fry until brown.
Add tomatoes and fry for another 6-8 minutes.
Remove from heat and bring down to room temperature. Put into a blender, along with ½ cup water and tomato paste. Grind into a puree.
Transfer back to the saucepan and bring to a boil on low heat.
Fry paneer in hot oil/ghee and remove. Ensure that you do not brown them.
Add garam masala, chili powder, turmeric powder, coriander powder, and salt. Mix well.
Add cashew nut paste and cochineal. Stir and cook on low heat for 5 minutes, or until the gravy turns thick.
Just before serving, heat the gravy and float fried paneer pieces on top.
Garnish with coriander leaves and serve.

roti and palak paneer !!





1st roti
Ingredients:
Whole Wheat Flour (Chapati Flour) – 2 cups
Salt – 1/2 tsp (optional)
Oil – 4 tsp
Warm Water – 3/4 cup
All-purpose flour – for rolling and dusting


HOw to make roti :
1. In a large mixing bowl, mix Chapati Flour and Salt well.
2. Add Oil and mix until all lumps are gone.
3. Add Warm Water a little at a time to form a medium soft dough ball. Do not overwork the dough.
4. Add few drops of Oil and coat the dough ball. Cover and let it rest for 15 minutes.
5. Heat Tawa or skillet on medium heat.
6. Knead the dough once and divide into golf ball size balls.
7. Dip one ball into the All-purpose flour to coat and roll it out into a thin disc. Keep dipping the rotli into the dry flour to prevent it from sticking to the rolling surface.
8. Shake or rub off excess flour from the rotli and place it onto the hot tawa.
9. Flip to the other side once you see bubbles appear on the surface. Allow it to cook for 10-15 seconds.
10. Increase the stove heat to High, gently pick the rotli up with tongs, remove the tawa off of the flame, flip the rotli over and place onto an open flame.
11. The rotli should balloon up. Flip it over and cook on the other side.
12. Place the cooked rotli into an insulated container and smear it with Ghee or clarified butter and repeat the process for the remaining dough.

Makes approx 12 rotlis.


Palak paneer
Ingredients:
• 1/2 kg Spinach • 100 gm Paneer • 1 Onion • 1/4 tsp Black pepper powder • 1/4 tsp Ginger paste • 1/2 tsp Green chilli paste • 3 tbsp Butter • 2-3 Bay Leaves • 1 tsp Cumin Seeds • 1 tsp Garam Masala Powder • Vegetable oil • Salt to taste

How to make Palak Paneer:

Mix green chilli paste and ginger- paste with spinach. Add little water.
Pressure-cook the above mixture for 7 to 8 minutes. Remove before the first whistle.
Cut cheese into small cube shaped pieces. Keep 3 cubes for decoration.
Heat vegetable oil in a frying pan.
Fry the paneer cubes on a medium flame till they become light brown.
Take the pieces out of the pan.
Take 2 tbsp butter and heat it.
Add bay leaves and cumin for frying.
Add chopped onions and fry again until they turn pink.
Add garam masala powder, black pepper powder and salt. Mix well.
Now add fried paneer and cooked spinach. Mix them properly.
Put the palak paneer in a baking tray.
Add the remaining butter and bake for about half an hour at 180 deg C.
Grate remaining paneer pieces and decorate.
Palak paneer is ready to serve.

How to make gulab jamun !!

Ingredients ;
1 cup Carnation Milk Powder,
1/2 cup all purpose flour,
1/2 tsp baking soda,
2 tablespoons butter -melted
Whole milk just enough to make the dough     And For the Sugar Syrup
                                                                              2 cups Sugar
                                                                              1 cup water
                                                                              Oil for frying


Now look-->   
                    


  • Make the dough by combining the milk powder, Bisquick, butter. Add just enough whole milk to make a medium-hard dough. Divide the dough into 18-20 portions. Make balls by gently rolling each portion between your palms into a smooth ball. Place the balls on a plate. Cover with a damp yet dry kitchen towel.
  • Heat the oil on high and then lower the heat to medium. Slip in the balls into the hot oil from the side of the pan, one by one. They will sink to the bottom of the pan, but do not try to move them. Instead, gently shake the pan to keep the balls from browning on just one side. After about 5 mins, the balls will rise to the surface. The Gulab Jamuns should rise slowly to the top if the temperature is just right. Now they must be gently and constantly agitated to ensure even browning on all sides.
  • If the temperature of the oil is too high then the gulab jamuns will tend to break. So adjust the temperature to ensure that the gulab jamuns do not break or cook too quickly.
  • The balls must be fried very slowly under medium temperatures. This will ensure complete cooking from inside and even browning.
Sugar Syrup...
  • The syrup should be made earlier and kept warm. To make the hot sugar syrup add mix the 2 cups of sugar to 1 cup of water. Add 4-5 cardamom pods, slightly crushed and a few strands of "Kesar". Mix with a spoon and then heat at medium heat for 5-10 minutes until sugar is all dissolved in water. Do not overheat, that will caramelize the sugar.
  • Transfer this hot syrup into a serving dish. Keep warm on stove. Add the fried gulab jamuns directly into the warm syrup. Leave gulab jamun balls in sugar syrup overnight for best results. They can be served warm or at room temperature.
